The urgent need for sustainable seafood
The urgency for sustainable seafood has never been greater. With up to 60% of global fish stocks overfished and the oceans plagued by plastic pollution, there‘s an alarming risk to marine ecosystems. The fishing industry‘s impact on marine biodiversity is dramatic, affecting the lives of the estimated 3 billion people worldwide who rely on oceans for food and income. Revo Foods‘ mycoprotein-based salmon filet is a promising solution to this crisis. About seafood safety
In recent years, there has been growing concern about the safety of consuming conventional fish due to elevated levels of mercury and polychlorinated biphenyls (PCBs), which pose health risks and environmental questions. Additionally, the occasional presence of parasites (like white worms) in salmon fillets has been identified as roundworm parasites, further complicating food safety concerns.
Moreover, recent concerns about ocean health, such as the presence of toxins and microplastics in the ocean and the decision to release treated radioactive water stemming (from a nuclear incident 12 years ago) into the Pacific, have sparked global worries about their impact on marine ecosystems and seafood safety.
As awareness continues to rise, there is a growing demand for sustainable alternatives. Stakeholders, including consumers, industry leaders, and policymakers, must collaborate to explore and implement safer, sustainable alternatives.

Revo Foods introduces “THE FILET – Inspired by Salmon”, made with 3D Structuring and Mycoprotein.
“THE FILET – Inspired by Salmon” marks a milestone for being the first 3D printed vegan seafood – and the first 3D printed product in general that is available to consumers. The main ingredient is mycoprotein created from filamentous fungi, which has excellent nutritional values and a natural meat-like texture. THE FILET also has a Nutriscore rating of “A”, due to its high protein-, and Omega-3-content.

Mycoprotein has only minimal processing requirements and needs fewer resources (water, emissions) in its production compared to conventional fish production, making it significantly more environmentally friendly.
The mycoprotein ingredient is the result of a co-development between Revo Foods and the Swedish startup Mycorena, in which Mycorena´s “Promyc” protein base was engineered specifically for 3D printing purposes. This development was supported with 1.5 Mill EUR of European funding.

Revo Foods "THE FILET - Inspired by Salmon" is available from October 1st at the Revo Foods Onlineshop in: Austria, Germany, Belgium, Denmark, Finland, France, Italy, Lithuania, Luxembourg, Netherlands, Slovenia, Spain, Czechia, Hungary, Poland, Slovakia, and Sweden.
The initial launch partner for "THE FILET" in September 14th was REWE/BILLA, one of the biggest European retailers.
